Pumpkin Bread, Pumpkin Everything!

Hey Guys!

Thank you for joining me on the blog! As you may know I absolutely love creating whether it’s through photographs, home decor or cooking. As I anticipated trying a new recipe I figured why not share it too! I love pumpkin everything in the fall and if you are here I know you do too! I am not much of a baker or a baker at all if you ask me. My definition of baking is making my go to oatmeal muffins with apples or recess cookie pre made from Publix, and I promise you that is absolutely it. I have always wanted to make more time to bake since I thoroughly enjoy being in the kitchen but have always found baking intimidating especially because if I am baking I want it to be healthy and filled with more conscious ingredients. I have been in various different seasons of life where I have wanted to have the time to learn to bake healthy and nutritious bake treats but found it overwhelming. With the success of this pumpkin bread I am excited to venture out and continue trying to learn new baking recipes for my family to enjoy. I aspire to have them remember seasons and holidays filled with lots of moms healthy goodies!

When I was done baking I said to hell if this pumpkin bread doesn’t taste any good well at least it will photograph pretty! It wasn’t until I was done styling it and making it all pretty that I decided to actually try it. I placed it on a cooling rack to ensure that it would cool and rest properly. At first I thought, “Oh my gosh the only piece I picked at is crumbling, ugh, again I am not a baker.” I decided to let it cool on the rack while I went off on my Sunday afternoon whereabouts. I came back about an hour later and to my surprise it was delicious and it wasn’t collapsing as I cut through it!

It was moist, pumpkin-y and delicious! At last a baking success. I was thrilled and so excited as my kids dug into it. We went out to dinner that night and on my way back home I texted my girlfriend who bakes and makes her own bread from scratch and asked if she would mind giving my bread a taste and some constructive criticism. She said the bread was moist perhaps it could be a little more “Pumpkin-y” but overall delicious. She devoured the piece I brought her!

I have already purchased a few more Pumpkin Puree Cans and I look forward to making more Pumpkin Bread this week! As I finalize the blog, today is Friday, and I have made the bread two different times and have shared plenty of it with my friends! So here it is! I’d love to share the recipe with you. I thought about making this blog more like a recipe but I am not a food blogger so I figured I would take pretty pictures and let the lady with the food blog share the recipe best!

Ingredients:

  • ▢ 1 ¾ cups whole wheat pastry flour

  • ▢ 1 teaspoon baking powder

  • ▢ 1 teaspoon baking soda

  • ▢ 1 teaspoon cinnamon

  • ▢ 1 ½ teaspoons pumpkin pie spice

  • ▢ ½ teaspoon sea salt

  • ▢ 1 cup canned pumpkin or homemade pumpkin puree {I added a cup and a half}

  • ▢ 2 large eggs

  • ▢ ½ cup maple syrup

  • ▢ ⅓ cup melted coconut oil- I used butter since I didn’t have coconut oil

  • ▢ ⅓ cup unsweetened applesauce-I used sweetened apple sauce because that’s what I had

  • ▢ ½ teaspoon vanilla


Start your oven at 350

Mix all the dry ingredients together in a bowl and then all the wet ingredient together. Once mixed together separately, Combine the two!

Place on a bread pan with parchment paper

Bake for 60 minutes

Allow bread to cool for 30 minutes to an hour


Topping:

  • ▢ 2 tbsp Powder Sugar

  • ▢ 1 tbsp Water

    Mix thoroughly together until you get a glazy look then drizzle on top
